This large-format bottle highlights the house’s biodynamic vineyards in Montgueux and Buxeuil, delivering a Champagne that is at once vibrant, refined and deeply complex. Made for enthusiasts who appreciate authenticity, it is an unadorned, terroir-driven cuvée that lets the fruit and long lees aging speak for themselves.

Tasting Notes
In the glass, this Champagne shows a luminous, pale gold hue with fine, persistent bubbles that form a delicate, continuous bead. The visual impression already hints at its long maturation on the lees. On the nose, expect an elegant interplay of fresh citrus and orchard fruits—think lemon zest, green apple and pear—layered with notes of white flowers, chalky minerality and subtle brioche from extended aging. With air, more complex nuances emerge: hints of toasted hazelnut, pastry cream and a gentle saline edge. The palate is taut yet generous, with a bone-dry attack that emphasizes precision and tension. Lively acidity carries flavors of crisp apple, Meyer lemon and stone fruit, wrapped around a core of chalk and crushed rock. Eight years on the lees lend a creamy, almost vinous texture and a refined autolytic character—fresh bread, almond, light honey—without ever feeling heavy. The finish is long, linear and mouthwatering, with a lingering impression of citrus peel and sea spray. Thanks to its structure, concentration and no-dosage profile, this Champagne has excellent aging potential. Enjoy it now for its energy and focus, or cellar the magnum for another 5–10 years to develop deeper nutty, toasty and tertiary notes while maintaining its backbone of freshness.

Production
The fruit for this cuvée comes from biodynamically farmed vineyards in Montgueux and Buxeuil, two outstanding terroirs in the Champagne region of France. Montgueux, often called the “Montrachet of Champagne,” is dominated by chalky soils that give finesse, tension and minerality to Chardonnay, while Buxeuil, with its Kimmeridgian and clay-limestone slopes, offers depth and structure to Pinot Noir. The vines are cultivated according to strict biodynamic principles, with careful attention to soil health and biodiversity, and grapes are harvested by hand at optimal ripeness to preserve acidity and aromatic purity. In the cellar, fermentation occurs spontaneously with native yeasts, emphasizing the natural identity of the fruit. The second fermentation takes place in bottle following the traditional champenoise method, and the wine then rests on its lees for an impressive eight years, gaining texture and complexity. After disgorgement, no dosage liqueur is added, resulting in a true “dosage zéro” Champagne that is completely dry and transparently expressive of its origin.

Food & Serving
This magnum is superb at the table, where its structure and precision shine. Pair it with pristine seafood such as oysters, scallop crudo, sushi or sashimi, as well as simply grilled fish with lemon and herbs. It also complements dishes with subtle richness—think goat cheese tart, poultry in a light cream sauce, or mushroom risotto—where its acidity cuts through and refreshes the palate. Serve well-chilled at around 8–10°C (46–50°F). For maximum expression, especially in magnum, open 15–20 minutes before serving and, if possible, pour into, or at least taste from, a white wine glass or a larger Champagne glass rather than a narrow flute to fully appreciate the aromatics. Decanting is generally not necessary, but allowing it to open in the glass will reveal additional layers of complexity.

Vincent Couche is a respected grower-producer in Champagne who has become known for his early and committed embrace of biodynamic viticulture in a region historically dominated by larger houses. Based in Buxeuil, in the Côte des Bar, with prized holdings in Montgueux, he farms his vineyards with an emphasis on living soils, low yields and meticulous handwork, believing that healthy vines are the foundation of authentic wines. Over the years, the estate has gained a strong following among Champagne purists and sommeliers for its low-intervention winemaking, long lees aging and minimal or zero dosage cuvées that foreground terroir rather than sugar or heavy cellar manipulation.
