Tasting Notes
In the glass, this Champagne shows a pale, luminous straw color with fine, persistent bubbles forming an elegant mousse. The nose is delicate yet expressive, opening with notes of lemon zest, green apple, white flowers, and fresh almond, followed by hints of chalk, brioche, and a touch of sea spray.
On the palate, it is crisp, dry, and linear, with a beautifully refined mousse that brings a sensation of creaminess without any heaviness. Citrus fruits, crunchy pear, and subtle stone-fruit tones are layered over a distinctly chalky minerality, leading to a long, saline finish that feels both mouthwatering and precise. Production
The Chardonnay grapes come from Premier Cru vineyards around Vertus in the Côte des Blancs, where chalk and limestone-rich soils lend the wines their signature tension and salinity. The fruit is hand-harvested at optimal ripeness to preserve natural acidity and carefully sorted to ensure only the best berries are pressed. Vinification is carried out parcel by parcel, often in stainless steel (and sometimes neutral oak for added texture), with the base wines blended across different plots and years to achieve balance and consistency. The wine then undergoes secondary fermentation in bottle and extended aging on lees, developing finesse and complexity, before being disgorged without dosage (Brut Nature) to highlight the purity of the terroir.

This Brut Nature Blanc de Blancs is a natural choice for an aperitif, where its freshness and finesse sharpen the appetite. Its saline, citrus-driven profile makes it a superb partner for sushi, sashimi, oysters, scallop crudo, and other delicate seafood dishes, as well as light fish tartares and simple grilled white fish. Serve well-chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in the glass or a quick, gentle decant in a chilled carafe can help the aromas open up, especially if serving with food.
