Tasting Notes
In the glass, this Ribolla Gialla shows a pale straw-yellow color with clear greenish reflections, underlining its youth and vibrancy. The nose is refined yet inviting, with a bouquet that suggests spring blossoms, acacia and subtle wildflower notes, layered with hints of fresh apple, citrus zest and a delicate herbal edge. Underneath, a gentle memory of forest and light wood tones—recalling acacia, chestnut and a touch of oak—adds aromatic complexity without ever feeling heavy.
On the palate, it is characteristically dry and pleasantly piquant, with a lively acidity that keeps everything focused and mouthwatering. Flavors of lemon, green apple and crunchy pear are joined by nuances of almond, white flowers and a faint spicy note from time spent in contact with wood. The alcohol is moderate and well-integrated, giving the wine a sleek, linear profile and a clean, sapid finish. Production
The grapes for L'Adelchi come from hillside vineyards in the Collio DOC of Friuli-Venezia Giulia, an area famed for its mineral-rich marl and sandstone soils and cooling breezes from both the Alps and the Adriatic. These conditions give Ribolla Gialla its signature tension and aromatic delicacy. Venica typically harvests the fruit by hand to ensure careful selection of healthy, perfectly ripe bunches. After gentle pressing, the must is mostly fermented at controlled temperatures in stainless steel to preserve freshness and aromatics, with a portion potentially matured in different types of neutral wood—such as acacia, chestnut and large oak casks—to add texture and subtle complexity. A period on fine lees further refines the palate, enhancing mouthfeel and length before bottling.
Food & Serving
This Ribolla Gialla is an ideal companion to delicate seafood dishes such as grilled prawns, steamed mussels, ceviche and simply prepared white fish, as well as vegetable-based starters, risotto with spring vegetables and lighter poultry or veal dishes. Its crisp acidity and dry profile also make it a natural pairing for fresh goat cheese, young pecorino and charcuterie with mild cured meats. Serve well-chilled, ideally around 8–10°C (46–50°F), to highlight its brightness and floral notes. Decanting is generally not necessary, but giving the wine a few minutes in the glass will allow its subtle forest and floral nuances to fully unfold.
