Tasting Notes
In the glass, Darscho 2022 shows a bright pale to medium straw color with golden highlights, hinting at both ripeness and careful barrel aging. The nose opens with ripe yellow apple and pear, joined by notes of quince and a subtle exotic tone reminiscent of melon or lightly ripe pineapple. Layers of roasted sesame, dried Mediterranean herbs and a delicate barrique spice (vanilla pod, toast, a touch of smoke) sit over a distinctly saline, almost sea-breeze-like minerality. On the palate, the wine is medium to full-bodied, with a finely woven, creamy texture that never feels heavy, thanks to lively, well-integrated acidity. The fruit carries through as baked yellow apple, pear and quince, accented by citrus zest and a gentle nuttiness. The oak is beautifully judged: it frames rather than dominates, adding structure and length. A salty, mineral backbone runs through the finish, which is long, dry and subtly spicy. Production
The grapes for Velich Darscho are sourced from multiple Chardonnay vineyards around Apetlon in the Seewinkel, a particularly warm corner of Burgenland near the Neusiedler See, where sandy and loamy soils over gravel and the proximity to saline lakes such as Darscho create a distinctive, mineral-inflected character. The vines, between 20 and 40 years old, deliver naturally lower yields and high concentration. Harvest is carried out by hand with strict selection in the vineyard, ensuring only perfectly ripe and healthy fruit is used. Fermentation takes place spontaneously with indigenous yeasts, allowing the terroir to speak clearly. The wine is then aged in French barriques, where careful management of lees and oak integration gives structure, texture and complexity without overshadowing the fruit or the salty, cool-mineral nuances that define the style.

Darscho 2022 is a versatile food wine that shines with refined, flavorful dishes. It pairs beautifully with roast chicken or guinea fowl, veal in creamy sauces, seared scallops, lobster or rich fish such as turbot or halibut. It also complements risotto with mushrooms, truffle dishes, and Alpine cheeses like Comté, Gruyère or aged mountain cheeses. Serve at 10–12°C to balance freshness and aromatic expression. A short decant of 30–45 minutes in a medium-sized carafe can help the wine open up, especially in its youth, allowing the subtle barrique notes and saline minerality to fully emerge.
