Tasting Notes
In the glass, the 2019 Arinto shows a pale straw to light lemon color with subtle greenish highlights, hinting at its youthful freshness. The nose is lifted and detailed, with aromas of lemon zest, green apple and white grapefruit layered over notes of crushed seashells, wet stone and a touch of white flowers and fresh herbs. On the palate, it is bright and linear, driven by Arinto’s hallmark acidity. Citrus and green orchard fruit take the lead, supported by hints of saline minerality, lime peel and a delicate, slightly chalky texture that adds grip and structure. The finish is long, clean and mouth‑watering, encouraging another sip. The Arinto grapes for this wine are typically grown on well‑drained, limestone and clay‑rich soils that accentuate tension, salinity and aromatic precision. Grapes are harvested by hand at optimal ripeness to preserve acidity and aromatic clarity, then gently pressed. The must is usually fermented at controlled, cool temperatures in stainless steel to highlight the grape’s pure fruit profile and mineral edge, with extended time on fine lees to build texture, complexity and subtle creaminess without masking the freshness.

Food & Serving
This Arinto is a natural partner for seafood and lighter dishes, where its bright acidity and saline edge really shine. Pair it with grilled sardines, simply prepared white fish, oysters, seafood risotto, ceviche or sushi, as well as fresh goat cheese, salads with citrus dressings and lightly seasoned poultry. Serve well‑chilled, ideally around 8–10°C (46–50°F), to emphasize its precision and lift. Decanting is not strictly necessary, but pouring it into a carafe 15–20 minutes before serving can help open up the mineral and floral nuances, especially if the wine has had a few years of bottle age.
