Tasting Notes
In the glass, Vadio Rosé Bruto 2020 shows a delicate, pale salmon hue with fine, persistent bubbles that form a steady mousse. The nose is clean and expressive, with notes of wild red berries, cranberry and pomegranate layered over hints of citrus zest, rose petals and a gentle mineral edge. On the palate, this sparkling rosé is dry, linear and refreshing, with crisp acidity and a mouthwatering, saline backbone typical of Bairrada’s limestone soils. Flavours of redcurrant, sour cherry and pink grapefruit are framed by a subtle brioche or biscuit nuance from its time on lees, adding texture and complexity without losing precision. The finish is long, bright and delicately savory, making it as suitable for the table as it is for an aperitif. Production
Sourced from Vadio’s vineyards in Bairrada, Vadio Rosé Bruto 2020 reflects the region’s cool, Atlantic climate and predominantly limestone-clay soils, which naturally favor high acidity and poised, ageworthy sparkling wines. The Baga grapes are harvested relatively early to preserve freshness, gently pressed to obtain a pale rosé must, and fermented at controlled temperatures in stainless steel to safeguard delicate fruit aromas. The base wine then undergoes secondary fermentation in bottle using the traditional method, followed by extended aging on the lees to build fine bubbles, subtle autolytic complexity and a harmonious, integrated profile before disgorgement as a Brut.

Food & Serving
This is a versatile sparkling rosé that pairs beautifully with a wide range of dishes, from fresh seafood and shellfish to charcuterie, sushi, ceviche and light poultry dishes. It works especially well with grilled prawns, salmon tartare, tuna tataki, seafood risotto or Mediterranean-style tapas. For local flair, pour it alongside salted cod croquettes or simple grilled sardines. Serve well chilled at around 8–10°C. While decanting is not necessary, opening the bottle a few minutes before serving and pouring into proper sparkling wine flutes or white wine glasses will allow the aromas to open and the texture to fully express itself.
