Vadio Branco 2021 is a vibrant, Atlantic‑influenced white from Portugal’s understated Bairrada region, crafted from the native varieties Bical and Cercial. This wine stands out for its combination of bright acidity, coastal freshness and subtle complexity, offering a refined yet thoroughly drinkable style. It showcases the historical character of Bairrada’s old indigenous grapes, which have long been prized for producing ageworthy, mineral-driven whites.

Tasting Notes
In the glass, Vadio Branco 2021 appears pale straw with greenish highlights, signaling both youth and freshness. The nose is lifted and expressive, with notes of citrus zest, green apple and white peach, layered over hints of fresh herbs, wet stone and a delicate floral touch. On the palate, the wine is zesty and linear, with Cercial bringing taut acidity and saline freshness, while Bical contributes a rounder texture and gentle stone-fruit character. Expect flavors of lemon, lime, crunchy pear and a subtle, chalky minerality that lingers on the finish. The overall impression is clean, precise and mouthwatering, with a fine balance between fruit and acidity. Enjoy it now for its energy and vibrancy, or cellar it for 3–5 years to allow the more mineral and tertiary notes to develop further.

Production
The grapes for Vadio Branco 2021 come from the west-facing Rexarte vineyard in Bairrada, nestled between the Atlantic Ocean and the inland DOC Dão. Here, sandy soils with significant limestone content give naturally low yields and impart a distinctive tension and minerality to the wine. The proximity to the Atlantic moderates the otherwise warm climate, preserving acidity and aromatic freshness in the grapes. The blend is 60% Cercial and 40% Bical, both traditional local varieties. After harvest, the grapes were destemmed and gently pressed, with the must cooled before fermentation. Fermentation was initiated with a selected house yeast culture and carried out at low temperatures (cold fermentation) to protect delicate aromatics and enhance fruit definition, resulting in a precise, fresh and finely textured white.

Food & Serving
This Bairrada white is an excellent partner for fresh seafood—think grilled sardines, clams in white wine, oysters or simply prepared white fish. It also pairs beautifully with light tapas, goat cheese, salads with citrus dressings and dishes featuring fresh herbs. Serve well chilled at around 8–10°C (46–50°F) to highlight its crispness and aromatic lift. Decanting is not essential, but opening the bottle 15–20 minutes before serving will help the wine open up and show more of its subtle mineral and floral nuances.
