Production
Cantina Tramin sources Stoan Bianco from selected hillside vineyards in Trentino-Alto Adige, many of which lie on steep slopes with calcareous and porphyry-rich soils that impart both tension and mineral finesse. The region’s pronounced diurnal range—warm, sunny days and cool nights—helps preserve aromatic intensity and lively acidity in the grapes. Harvest is carried out predominantly by hand, parcel by parcel, to ensure optimal ripeness and careful selection. After gentle pressing, the varieties are typically vinified separately: cool, temperature-controlled fermentations help retain purity of fruit, while partial fermentation and aging in large oak or acacia casks and on fine lees add texture, complexity, and subtle spice. The final blend is assembled with an eye toward balance between aromatics, structure, and minerality, then lightly refined before bottling to preserve the wine’s natural character.
Food & Serving
Stoan Bianco 2023 is a versatile partner at the table, ideal with refined seafood and white meat dishes. It pairs beautifully with grilled sea bass, prawns, scallops, or trout, as well as risotto with asparagus, spring vegetables, or porcini. Delicate poultry, veal in light cream sauces, and alpine cheeses—both semi-soft and moderately aged—also work very well. Serve chilled but not too cold, ideally around 10–12 °C, to allow the aromatics and texture to fully emerge. A brief decant of 15–20 minutes can help open up the nose and integrate the components, especially if the wine is served in its first few years.
