Made in tiny quantities and released only when Tommie judges the blend to be ready, Sprøng 2022 showcases his signature balance of wild character, precision, and drinkability. Inspired by traditional lambic and gueuze styles yet unmistakably its own creation, this cuvée has quickly become a cult favorite among sour beer and natural wine enthusiasts alike.

Tasting Notes
In the glass, Sprøng 2022 typically pours a hazy golden to deep straw color with a fine, persistent mousse and a delicate, creamy head. The appearance signals both freshness and complexity, inviting you into the glass. On the nose, expect vibrant aromas of citrus zest, green and yellow stone fruit, and fresh orchard notes layered over funkier nuances—think wild yeast, hay, subtle barnyard, and a light floral character. There’s often a mineral thread and a faint, vinous edge that nods toward natural white wine. The palate is taut, dry, and highly refreshing, with a nervy, mouthwatering acidity that frames the wild yeast character. Flavors may echo lemon peel, underripe apricot, crabapple, and a hint of gooseberry, all wrapped in a gentle, earthy funk. Fine carbonation keeps the texture lifted and lively, while a subtle bitterness and mineral finish give length and grip. Production
Tommie Sjef works with a patchwork of carefully selected base beers, many brewed with traditional grains and fermented through spontaneous or mixed fermentation, reflecting the cool climate and maritime influences of the Dutch landscape. The beers are typically aged in old oak barrels, where native yeasts and bacteria slowly transform them, layering complexity over time. For Sprøng 2022, Tommie blends different barrels and ages—sometimes including multiple years—to achieve a precise balance of acidity, fruit, funk, and structure. Harvesting and ingredient selection focus on purity and character, and the production is deliberately low‑intervention: no unnecessary additives, long maturation, and minimal handling before bottling with natural refermentation to create the fine, persistent bubbles.

Food & Serving
Sprøng 2022 pairs beautifully with a wide range of dishes that can stand up to its acidity and complexity. Try it with soft-ripened cheeses (Brie, Camembert, or washed‑rind styles), tangy goat cheese, charcuterie, and pâtés, or with seafood such as oysters, mussels, ceviche, and simply grilled fish. Its bright acidity also makes it a great match for salads with citrus dressings, pickled vegetables, sushi, or lightly spiced Asian cuisine.
