Tasting Notes
In the glass, it shows the dark, concentrated color you would expect from a serious Napa Cabernet. The nose opens with ripe black fruit, plum, tobacco, and spice, followed by subtle oak accents that add polish rather than overwhelm. The palate is energetic and full-bodied, with impressive freshness to balance the wine’s richness. Dark berries, plum, and warm spice lead the way, while the fine structure and extended finish give it real depth and persistence. This is a Cabernet with excellent aging potential, and it should continue to develop complexity over the coming years.

The H.W.C. cuvée is designed to showcase the diversity of To Kalon Vineyard’s Oakville parcels, bringing together fruit that reflects the intensity and richness of this exceptional terroir. The wine is matured in new French oak barrels, which adds texture, refinement, and a rounded finish while preserving the freshness and character of the fruit.

Food & Serving
This Cabernet Sauvignon pairs beautifully with grilled ribeye, lamb, braised short ribs, or hearty dishes with mushrooms and roasted vegetables. Serve it at around 16–18°C, and consider decanting for 1–2 hours before serving to allow the wine to fully open and show its layered aromatics and structure.
