Tasting Notes
In the glass, the wine shows a deep, inky colour that hints at its concentration and power. The nose opens with dark berries, plum, tobacco, and layered spice, framed by refined oak. On the palate, it delivers striking energy: ripe fruit intensity, bright acidity, firm structure, and a full, polished texture that carries through to a long, lingering finish. Thanks to its depth and balance, this Cabernet has excellent aging potential and should continue to evolve beautifully over time.

Production
The H.W.C. cuvée is built from multiple vineyard parcels in Oakville, Napa Valley, allowing To Kalon Vineyard to capture the complexity and nuance of its terroir. The area’s warm days, cooling influences, and well-drained soils are ideal for Cabernet Sauvignon, encouraging both ripeness and structure. The wine is aged for an extended period in new French oak barrels, adding polish, spice, and an extra layer of finesse to the final blend.

Food & Serving
This is a Cabernet Sauvignon that calls for rich, flavourful dishes such as grilled ribeye, roast lamb, braised short ribs, or aged hard cheeses. Serve it at around 16–18°C, and consider decanting for at least an hour to allow the wine to fully open and show its complexity.
