Highest Beauty is Andy Erickson’s elegant interpretation of To Kalon Vineyard, a Cabernet Sauvignon designed to capture the vineyard’s full character in one seamless cuvée. Sourced from one of California’s most celebrated sites, it brings together power, freshness, and refinement in a style that reflects both the prestige and complexity of To Kalon.

Tasting Notes
In the glass, it shows the deep, concentrated color you would expect from serious Napa Valley Cabernet. The nose is layered and expressive, with ripe dark fruit at the core, supported by subtle floral lift, fresh aromatics, and finely judged oak notes from French barrels. On the palate, the wine is polished and beautifully balanced, with soft, gentle tannins, a bright, lifted acidity, and juicy, mature fruit that feels both generous and precise. It has the structure to age gracefully for years, gaining further nuance and complexity over time while preserving its elegance.

Production
The grapes come from the renowned To Kalon Vineyard in California, a site known for its varied terroir and exceptional fruit quality. Harvested at night to preserve freshness and aromatic precision, the fruit is then rigorously sorted so that only the best ripe and intact berries enter the cellar. Fermentation is followed by a long, careful maceration to extract color, texture, and aromatic depth before the wine is matured in new French oak barrels.

Food & Serving
This Cabernet Sauvignon is an excellent match for premium cuts of beef, roasted lamb, venison, or dishes with rich mushroom and truffle notes. Serve it at around 16-18°C, and consider decanting for 1-2 hours if drinking young to allow the wine to fully open and show its layered aromatics and texture.
