Thomas Niedermayr Solaris 2020 is a distinctive Alpine white wine that showcases the energy and aromatic purity of the Solaris grape, grown in the cool heights of Südtirol. Made by one of the region’s most forward-thinking biodynamic producers, it combines freshness, structure, and a modern sense of place.

Tasting Notes
In the glass, it shows a clear straw-yellow color with light golden highlights. The nose is expressive and layered, offering ripe pear, citrus, tropical fruit, white flowers, herbs, and a subtle mineral edge. The palate is medium-bodied and lively, with vibrant acidity and a gentle creamy texture that gives the wine real shape and depth. Flavors of citrus and stone fruit linger on a long, clean finish with a discreet spicy note. It is enjoyable now for its freshness and character, but it can also develop nicely over short-term cellaring.

Production
The wine comes from high-altitude vineyards in the Dolomites, where calcareous and porphyry-rich soils, together with cool nights and warm days, help preserve acidity and aromatic precision. Solaris is vinified with a low-intervention approach, using natural fermentation and often some lees contact, then aged mainly in stainless steel or neutral vessels to keep the wine clean, focused, and expressive.

Food & Serving
This wine pairs beautifully with grilled white fish, shellfish, risotto, fresh goat cheese, and vegetable dishes with herbs or a light cream sauce. Serve at 9–11 °C, and decanting is generally not necessary unless you want to open up its aromatic profile a little more.
