Thomas Niedermayr Hof Gandberg Gandfels Bio 2019 is a characterful red from Trentino–Südtirol, crafted entirely from a field blend of disease-resistant PIWI varieties. This is not a conventional varietal wine, but a thoughtful, long‑aged cuvée that reflects both place and the pioneering spirit of the estate. It stands out for its purity, energy and originality, offering a compelling alternative for drinkers looking beyond the classic grape names. Its uniqueness lies in the old mixed planting of red PIWI varieties, collected and selected by Thomas’ father Rudi over more than 30 years, now grown on a single high‑altitude parcel above Eppan. The exact grape composition is no longer known, making the wine a true expression of site rather than variety. Long maturation in neutral wood and stainless steel, followed by bottling without fining or filtration, underlines the estate’s low‑intervention, organic approach and has helped establish Hof Gandberg as one of the most forward‑thinking names in Südtirol.
Tasting Notes
In the glass, Gandfels Bio 2019 typically shows a translucent, vibrant ruby to garnet hue, with a lively brightness that hints at its freshness and altitude. Swirl the glass and you’ll notice a fine viscosity rather than heaviness, setting the stage for an elegant, nuanced red.
The nose opens with precise notes of red fruits, especially sour cherry and wild berries, supported by subtle hints of licorice and a distinctive bitter‑citrus nuance reminiscent of chinotto, the Sicilian bitter orange soda. With air, more layers emerge: dried herbs, a touch of spice, and a faint stony, mineral tone echoing the dolomitic soils. On the palate, the wine is medium‑bodied yet intense, driven by juicy, mouthwatering acidity and fine‑grained tannins. The sour cherry and red currant notes are joined by an almost tonic‑like bitterness in the background, giving the wine both refreshment and depth. The texture is silky but energetic, with excellent balance between fruit, spice and minerality, and a long, clean, slightly savory finish.
Thanks to its structure, natural acidity and extended élevage before release, Gandfels Bio 2019 has solid aging potential. It is already expressive now, but should develop further complexity, integrating its fruit and herbal notes over the next 6–8 years, rewarding careful cellaring.
Production
The grapes for Gandfels Bio 2019 come from a single parcel near Hof Gandberg on the slopes above Eppan at around 520 meters above sea level. Here, deep, clay‑rich soils loaded with limestone and white dolomite stone, combined with the cool Alpine influence, give naturally low yields, expressive aromatics and a marked mineral line in the wines. The mixed planting of red PIWI varieties—disease‑resistant new crossings collected and selected by Rudi Niedermayr over more than three decades—are grown organically and harvested by hand on the same day. In the cellar, the bunches were partially destemmed and fermented spontaneously with native yeasts. After about 14 days of maceration, the wine was pressed off and then aged for 31 months in a combination of neutral wooden casks and stainless steel tanks. It was bottled without fining or filtration, preserving texture, aromatics and the authentic character of the vineyard.

Gandfels Bio 2019 is a versatile food wine that pairs beautifully with flavorful but not overly heavy dishes. Try it with roast poultry, herb‑crusted pork, veal scaloppine, or Italian classics such as speck, cured meats, and medium‑aged Alpine cheeses. It also works well with mushroom risotto, roasted root vegetables, or tomato‑based pasta dishes, where its bright acidity and subtle bitter‑citrus nuance can really shine. Serve at 14–16°C (57–61°F) to highlight its freshness and aromatics. A short decant of 30–45 minutes helps the wine open up, especially in its youth, bringing out the full spectrum of fruit, spice and herbal complexity.
