Tasting Notes
In the glass, the 2021 Cornas Chaillot shows a deep, vibrant ruby-purple hue, hinting at both concentration and freshness. The nose unfolds in layers: ripe blackberries and black cherries are interwoven with graphite, cracked black pepper, cedar wood and a subtle stemmy, herbal lift from whole-cluster character. As it opens, notes of smoked meat, violets and a whisper of cool stone add further complexity.
On the palate, this is medium to full-bodied yet impeccably poised, carrying its power with a sense of effortlessness. Dark, pristine fruit is framed by fine-boned tannins and a vivid, energetic core that drives through the mid-palate. Peppery spice, savory undertones and those graphite and cedar nuances echo on a long, refined finish that feels both timeless and modern. The structure and acidity suggest excellent aging potential; while already expressive with some air, this 2021 should evolve beautifully over the next 10–20 years, gaining additional depth, polish and tertiary complexity.
Production
Cornas Chaillot is drawn from the steep, terraced slopes of the Chaillot vineyard in Cornas, where poor granitic soils and dramatic exposures yield low yields of intensely flavored Syrah. Allemand farms these parcels with meticulous, hands-on care, favoring low-intervention, sustainably minded practices and harvesting by hand to ensure only perfectly ripe, healthy grapes reach the cellar. In the winery, whole clusters are typically used to enhance aromatic lift and structure, with a traditional vinification in concrete or neutral vessels, followed by élevage in mostly older barrels. New oak is kept to a minimum so that the character of Syrah and the granitic terroir of Cornas can speak clearly in the finished wine.
Food & Serving
This Cornas is a superb match for robust, savory dishes such as roast lamb with rosemary, grilled ribeye, game birds, venison, or slow-braised short ribs. It also shines alongside earthy preparations like wild mushroom ragù, lentils with smoked bacon, or aged hard cheeses. Serve at 16–18°C (about 60–64°F) to highlight its aromatics and freshness. For current drinking, decanting for 1–2 hours is recommended to allow the wine to fully unfurl; with additional bottle age, a shorter decant or a gentle splash in a carafe will be sufficient.

Thierry Allemand is one of Cornas’s most revered vignerons, widely regarded as a standard-bearer for the appellation and a champion of its traditional, terroir-focused style. Beginning his work in the vineyards in the late 1970s and early 1980s, often reclaiming neglected parcels on steep granitic slopes, he built his domaine patiently, vine by vine. Today, his bottlings—particularly from Reynard and Chaillot—are considered among the most authentic and sought-after expressions of pure Syrah in the Northern Rhône.
