Production
The Macallan Double Cask 12 Years is produced at The Macallan Estate in Speyside, Scotland, overlooking the River Spey and surrounded by rolling barley fields and a cool, temperate climate ideal for slow maturation. The spirit is crafted from carefully selected Scottish barley and distilled in Macallan’s signature small copper pot stills, renowned for producing a rich and full-bodied new make spirit. For the Double Cask range, the whisky is matured in a combination of American oak and European oak casks, both seasoned with dry Oloroso sherry in Jerez, Spain, before being filled in Scotland. The American oak lends notes of vanilla, citrus and sweetness, while the European oak contributes dried fruit, spice and structure; the two components are then expertly married to achieve the Double Cask’s characteristic balance.

Food & Serving
This 12-year-old single malt pairs beautifully with roast chicken, glazed pork, smoked salmon, or mildly spiced dishes where its sweetness and gentle spice can shine. It is also excellent alongside aged hard cheeses, almond pastries, or desserts like crème brûlée and apple tart. Serve neat at around 18–20°C (64–68°F) for the most expressive nose and palate; a few drops of water can help open up the layers of aroma. Decanting is not necessary, but allowing the whisky a few minutes in the glass before sipping will enhance its complexity.
