The Juice Asylum’s Il Terzo Grado Rosso 2022 is a vibrant, biodynamic Tuscan red made for drinkability, freshness, and pure fruit expression. Alessio Guido’s debut wine stands out for its minimal-intervention approach, lifted aromatics, and unmistakable Sangiovese character, offering a modern, approachable take on Tuscany with plenty of personality.

Tasting Notes
In the glass, it shows a bright, youthful ruby tone. The nose is exuberant and expressive, with candied cherry, dark strawberry, raspberry sweets, tomato leaf, violets, dried rose petals, and a savory streak of herbal licorice. The palate is juicy, crisp, and mouthwatering, driven by dense cherry fruit, sour red berries, pomegranate, blood orange, balsamic lift, camphor, menthol, and a touch of licorice. Tannins are soft and lightly grippy, giving shape without heaviness. This is a wine to enjoy for its freshness and energy, though it should hold well over the next few years as its fruit and spice complexity continue to unfold.

Production
The wine is based on Sangiovese from biodynamically farmed vineyards in Montepulciano, complemented by a smaller portion of Merlot from the Cortona area, along with minor amounts of Trebbiano and Malvasia Bianca. It is made with minimal intervention, using native yeasts, no added sulphites, and partial carbonic maceration to enhance fruit purity and softness. Fermentation and élevage take place entirely in stainless steel to preserve the wine’s bright, lively character and clean Tuscan fruit profile.

Food & Serving
Serve slightly chilled, ideally around 14–16°C, to highlight its freshness and aromatic lift. It works beautifully with antipasti, charcuterie, tomato-based pasta, roasted vegetables, grilled chicken, pork, or simple Tuscan-inspired dishes; decanting is generally unnecessary, though a short aeration can help if opened very young.
