Tasting Notes
Pale straw in the glass, it shows a bright, luminous character that hints at tension and precision. The nose is lifted and refined, with notes of citrus peel, green apple, white flowers, and a distinct smoky, saline minerality shaped by the volcanic soils. On the palate, it is crisp and focused, with lively acidity, a supple texture, and layers of lemon, pear, herbs, and wet stone. The finish is long and mouthwatering, with a persistent mineral edge. While already highly appealing in youth, it has the structure and balance to age gracefully for several years, developing added depth and complexity over time.

Production
Santo Spirito is a vineyard site on Mount Etna, where high altitude, volcanic ash, and strong diurnal shifts create ideal conditions for Carricante to retain freshness and aromatic clarity. The grapes are typically harvested by hand to preserve quality and allow careful selection in the vineyard. Vinification is carried out with a light touch to emphasize purity and terroir expression rather than overt winemaking influence.

Food & Serving
This Etna Bianco is an excellent match for shellfish, grilled fish, crudo, oysters, and delicate Mediterranean dishes, as well as fresh cheeses and vegetable-based plates.
