Tenuta degli Dei Cavelli Toscana 2021 is a striking Super Tuscan blend from the sun-drenched hills of Panzano in Chianti, crafted by Tommaso Cavalli in collaboration with acclaimed winemaker Carlo Ferrini. Built on Cabernet Sauvignon, Petit Verdot, and Cabernet Franc, it combines depth, elegance, and impressive aging potential in a style that reflects both the power of the region and the precision of modern Tuscan winemaking.

Tasting Notes
In the glass, this 2021 vintage shows a deep, dark ruby color with plenty of concentration and visual intensity. The nose opens with ripe blackberry and blackcurrant, followed by more layered notes of coffee, graphite, leather, and warm spice. The palate is full-bodied and structured, with silky tannins, vibrant acidity, and a sense of balance that keeps the richness in check. Dark chocolate, black fruit, and a subtle mineral edge carry through a long, persistent finish, suggesting excellent cellaring potential over the coming years.

Production
The grapes come from marl-rich soils at around 400 meters above sea level in a south-facing site between Panzano in Chianti and the Florence area, where strong sunlight helps achieve full phenolic ripeness. Harvesting is done by hand with strict cluster selection to ensure only the healthiest, most mature fruit is used. Vinification focuses on extracting color, structure, and aroma, after which the wine matures for about 18 months in barriques and tonneaux made from a mix of new and partially used French oak. A final period in cement tanks helps preserve freshness and finesse, adding clarity to the fruit and keeping the oak influence beautifully integrated.

Food & Serving
This is a superb wine for rich dishes such as grilled ribeye, braised lamb, game, or slow-cooked beef with herbs and dark sauces. It also pairs well with mature hard cheeses and Tuscan-style cuisine. Serve at 16–18°C, and decant for at least 1 hour if drinking young to allow the aromatics and structure to open up fully.
