Grown on a single hillside vineyard in the heart of the Classico zone, this wine balances precision, minerality and ripe orchard fruit with effortless grace. It’s a Soave for those who enjoy purity and finesse over power, yet still want depth and complexity in the glass. The Castellaro bottling stands out for its high-altitude vines, volcanic soils and low yields, which combine to give a particularly intense, saline and structured style of Soave. Historically, the hills around Castellaro have been prized for white wine production since medieval times, and Suavia has played a key role in reviving the reputation of Soave Classico as one of Italy’s great terroir-driven whites.

Tasting Notes
In the glass, the 2020 Castellaro shows a luminous, pale straw yellow color with subtle green reflections, signaling freshness and tension. Swirl the glass and you’ll notice fine, slow-forming legs that hint at concentration without heaviness. The nose opens with delicate white flowers, chamomile and elderflower, followed by ripe peach, yellow plum and crisp pear. Beneath the fruit, there’s a distinct mineral edge reminiscent of wet stone and flint, plus nuances of almond, herbal tea and a gentle citrus zest. On the palate, the wine is dry, medium-bodied and finely textured, with a lively line of acidity that carries flavors of white peach, lemon peel and green apple. The volcanic origin of the soils comes through in a clean, stony minerality and a subtle smoky note in the background. The finish is persistent and mouthwatering, leaving hints of almond, saline tang and fresh herbs. While beautifully approachable now, the 2020 vintage has the structure and acidity to evolve gracefully for 5–7 years from vintage, gaining more honeyed, nutty and herbal complexity with a bit of bottle age.

Production
The Soave Classico Castellaro 2020 is sourced exclusively from Suavia’s Castellaro vineyard, located on steep, terraced slopes in the heart of the historic Soave Classico zone in Veneto. The vines, predominantly Garganega, are rooted in ancient volcanic soils rich in basalt and tufa, which lend the wine its characteristic tension and mineral backbone. The elevation and exposure provide excellent diurnal temperature shifts, preserving aromatic freshness and acidity. Grapes are hand-harvested in small crates to ensure optimal selection and to protect the delicate skins, often picked in several passes to capture perfect ripeness across the vineyard. In the cellar, the fruit is gently pressed and the must is clarified by cold settling. Fermentation typically takes place in temperature-controlled stainless-steel tanks to safeguard the pure expression of Garganega and its terroir. The wine is then aged on fine lees for several months, with periodic bâtonnage, adding subtle texture and complexity while maintaining a clean, precise profile. Oak influence, if used at all, is minimal, allowing the volcanic character and varietal aromatics to shine.

Suavia Soave Classico Castellaro 2020 is a versatile food wine that excels with refined yet simply prepared dishes. It is a natural match for seafood—think grilled prawns, seared scallops, branzino, or lightly fried calamari—as well as delicate white fish crudo or ceviche where its citrusy freshness can really lift the flavors. It also pairs beautifully with risotto (especially with spring vegetables, seafood, or saffron), fresh goat cheese, burrata, and mild cow’s milk cheeses. Classic Italian pairings include vegetable-based antipasti, herb-roasted chicken, and pasta with clams or light cream sauces. Serve well-chilled but not icy, ideally at 8–10°C (46–50°F), to allow the floral and mineral notes to emerge. Decanting is not essential, but pouring the wine into a larger glass and giving it a few minutes in the glass will help open up its aromatic complexity. This is a wine that works equally well as an elegant aperitif and as a serious partner at the table.

Suavia is a family-run estate located in the medieval village of Fitta in the heart of Soave Classico, Veneto.
