Production
Sourced from selected parcels in the Champagne region of France, Stephane Colas Champagne Brut reflects the cool climate and chalk-rich soils that give Champagne its hallmark tension and minerality. Grapes are typically harvested by hand to ensure gentle handling and careful selection of only the healthiest bunches. Vinification follows the traditional méthode champenoise: a first fermentation in stainless steel (and possibly a small portion in neutral oak, depending on the base year), followed by blending of reserve wines to achieve a consistent house style. After the second fermentation in bottle, the wine rests on its lees for an extended period, gaining texture and complexity before disgorgement and a carefully judged Brut dosage.

This Champagne is an excellent match for a wide range of dishes: try it with oysters, scallop crudo, sushi, and classic seafood platters, or pair it with soft cheeses, tempura, light poultry dishes, and salty appetizers like charcuterie or gougères. Serve well-chilled at around 8–10°C (46–50°F) to highlight its freshness while allowing the aromatics to express themselves. A brief 10–15 minutes in the glass is usually enough for it to open up; decanting is not necessary, though pouring into proper tulip-shaped Champagne glasses will show it at its best.
