Tasting Notes
In the glass, the 2021 SLV Cabernet Sauvignon shows a deep, saturated ruby to garnet hue with an inky core, hinting at both concentration and youth. The nose is layered and complex, opening with ripe blackcurrant, black cherry and plum, followed by notes of graphite, cedar, bay leaf and violets, with subtle hints of cocoa, vanilla bean and baking spice from careful oak aging.
On the palate, this wine is full-bodied yet refined, with a finely knit tannic structure that is typical of the Stags Leap District—firm but polished. Flavors of cassis, blackberry and dark cherry are interwoven with notes of licorice, espresso, tobacco leaf and mineral nuances from the volcanic and alluvial soils of SLV. The acidity is fresh and vibrant, giving energy and lift to the long, savory finish. Still youthful, the 2021 vintage has excellent aging potential; it will reward patience over the next 10–20 years, developing more tertiary complexity, silkier tannins and an even more harmonious profile.
Production
The SLV vineyard lies in the heart of Napa Valley’s Stags Leap District, where a unique mix of volcanic soils, gravelly loam and alluvial deposits creates ideal conditions for Cabernet Sauvignon. The district’s warm days and cool, breezy nights—tempered by nearby hillsides and the San Pablo Bay influence—allow grapes to ripen slowly while retaining natural acidity. Grapes for the 2021 SLV Cabernet are typically harvested by hand in small lots at optimal ripeness, with careful sorting in the winery to ensure only the finest fruit is used. Fermentation takes place in temperature-controlled tanks to preserve aromatics and structure, followed by extended maceration to gently extract color, flavor and tannin. The wine is then aged in high-quality French oak barrels (a significant portion new), where it develops complexity, texture and its signature refined character before bottling.
Food & Serving
This Cabernet Sauvignon pairs beautifully with richly flavored dishes that can match its depth and structure. Think dry-aged ribeye, roast lamb with rosemary, beef short ribs, venison, or truffle-infused dishes; it also works well with hard, aged cheeses like Comté, aged cheddar or Parmigiano-Reggiano. Serve at 16–18°C (60–64°F) to highlight both aromatics and texture. Decanting is recommended—about 1–2 hours for a young 2021 bottle—to allow the tannins to soften and the layers of fruit, spice and mineral notes to fully emerge.

The estate’s story is rooted in the pioneering work of Nathan Fay, who planted the first Cabernet Sauvignon in what is now the Stags Leap District in 1961, proving that this supposedly “too cool” area could yield stunning Cabernet. Inspired by tasting Fay’s 1969 home-made Cabernet, the founder of Stag’s Leap Wine Cellars acquired the adjacent ranch—now known as SLV—and later purchased Fay’s original vineyard, naming it FAY in his honor. Today, Stag's Leap Wine Cellars is celebrated for crafting age-worthy, terroir-driven Cabernets, particularly from its estate vineyards SLV and FAY, and remains a reference point for elegance and balance in Napa Valley Cabernet Sauvignon.
