Tasting Notes
In the glass, Villa Fidelia Rosso 2004 typically shows a deep garnet core with brick-tinged edges, reflecting its careful aging. The nose is layered and expressive, offering notes of blackcurrant, dark cherry, plum compote, and dried violets, interwoven with nuances of cedar, tobacco leaf, leather, sweet spice, and a hint of graphite from the Cabernet components.

Production
Villa Fidelia Rosso is sourced from hillside vineyards in Umbria, around the historic towns of Spello and Assisi, where clay-limestone soils and significant diurnal temperature shifts help build both ripeness and aromatic complexity. Grapes are harvested by hand to allow careful selection in the vineyard and at the winery, ensuring only the healthiest bunches of Merlot, Cabernet Sauvignon, and Cabernet Franc make it into the final blend. After fermentation in temperature-controlled tanks—often with extended maceration to extract color, tannin, and flavor—the wine is traditionally aged in small French oak barrels (barriques), a practice that adds structure, spice, and depth while preserving the natural character of the fruit. The components are then blended and further refined in bottle before release.

This mature Umbrian red pairs beautifully with richly flavored dishes such as braised lamb shanks, slow-cooked beef stew, osso buco, or roast game birds. It also works well with aged hard cheeses, truffle dishes, and mushroom-based pastas or risottos, all of which echo the wine’s savory, earthy notes. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity without the alcohol feeling too prominent.
