Spier, 21 Gables Sauvignon Blanc 2023

Spier 21 Gables Sauvignon Blanc 2023 is a polished Stellenbosch white that combines vivid Sauvignon Blanc aromatics with a creamy, textured mouthfeel. Named after Spier’s remarkable collection of 21 preserved Cape Dutch gables, it reflects both the heritage of the estate and the quality level reserved for the winery’s top wines.

Tasting Notes
In the glass, it shows a bright, inviting profile with lifted aromas of red currants, green fig leaves, and fresh-cut grass. On the palate, the wine is concentrated and richly textured, with a creamy core balanced by a crisp, green, mouthwatering finish. The overall impression is one of freshness and precision, but with more depth and structure than a typically light Sauvignon Blanc. It is enjoyable now for its energy and aromatic detail, and should also hold well short term thanks to its concentration and balanced acidity.

Production
The grapes are harvested early in the morning by hand into 10 kg crates to preserve freshness, then pre-cooled before destemming and pressing. Skin contact is kept to a maximum of six hours, and fermentation takes place under controlled temperatures of 12–14 °C to maintain the variety’s clean, expressive character. The wine is then aged for six months on its lees before bottling, which adds texture and complexity.

Food & Serving
This Sauvignon Blanc pairs beautifully with fresh seafood, goat’s cheese, grilled asparagus, herb-forward salads, and light poultry dishes. Serve chilled at around 8–10 °C; decanting is not necessary.
