Tasting Notes
In the glass, the wine is inky and deeply colored, with a dense, almost impenetrable core that signals its intensity. The nose is expansive and layered, offering dark plums, blackcurrant tart, cassis, anise, nutmeg, and rose petals, all wrapped in finely judged oak. On the palate, those dark fruit notes return alongside blueberry, pomegranate, licorice, crushed stones, tobacco, sage, and a subtle smoky edge. The texture is rich and commanding, yet polished, with remarkable length and precision on the finish. This is a wine built for the long haul and should continue to age beautifully for at least 20 years, gaining even more nuance and complexity over time.

Production
Hillside Select is made entirely from 100% Cabernet Sauvignon grown on 14 small hillside blocks at Shafer’s estate in Napa Valley, where the rocky, elevated sites provide excellent drainage and naturally low yields. The fruit is harvested from these steep parcels and vinified with a focus on capturing the intensity and purity of the vineyard fruit. For the 2014 vintage, winemaker Elias Fernandez aged the wine for 32 months in 100% new French oak, adding structure, spice, and seamless integration to the finished wine.

Food & Serving
This is a dramatic, full-bodied Cabernet Sauvignon that pairs best with richly flavored dishes such as dry-aged ribeye, lamb chops, braised short ribs, venison, or truffle-infused mushroom dishes. Serve at 16–18°C, and consider decanting for at least 1–2 hours if drinking young to allow the wine to open fully and soften its structure.
