Tasting Notes
In the glass, the wine shows a clear straw-yellow color. The nose opens with white flowers, lemon zest, and hints of exotic fruit, giving way to more layered aromas as it breathes. On the palate, it delivers notes of white melon, apricot, and ripe pineapple, complemented by subtle touches of flint, honey, and crème brûlée. The wine’s lively, elegant acidity gives it a distinctly fresh, almost Chablis-like tension, balancing its richness and depth with impressive finesse. With its structure and complexity, this Chardonnay has excellent aging potential and should continue to develop gracefully in bottle over the coming years.

Production
The grapes come from Red Shoulder Ranch in Carneros, a cool-climate site well suited to producing Chardonnay with freshness, aromatic lift, and natural balance. The fruit is pressed as whole clusters and fermented with native yeasts in a combination of oak barrels and stainless steel tanks. The wine then matures for eight months, with around 40% aged in new French oak and the remainder kept in steel. As always at Shafer, malolactic fermentation is not used, preserving the wine’s crisp, precise character.

Food & Serving
This Chardonnay is an excellent match for richer seafood dishes, roast chicken, lobster, scallops, creamy pasta, or poultry with herb and butter sauces. Serve it chilled at around 10–12°C to keep the wine’s freshness and detail intact. Decanting is not necessary, though a little time in the glass will help the aromas fully open.
