Tasting Notes
In the glass, Rosso...Se 2020 shows a luminous, translucent ruby color with garnet highlights, hinting at its delicacy and freshness. The nose is vibrant and inviting, offering red cherry, wild strawberry and blood orange alongside notes of dried herbs, rose petals, white pepper and a subtle, salty sea-breeze character that speaks clearly of Liguria’s coastline. On the palate, it is juicy, lithe and finely textured, with silky tannins and a bright, mouthwatering acidity that keeps every sip refreshing. Flavors of crunchy red berries, pomegranate, sweet-sour cherry and a touch of citrus zest are layered with savory hints of Mediterranean scrub, tea leaves and gentle spice. The finish is persistent yet feather-light, with a saline, almost mineral snap that makes it incredibly food-friendly. Production
Selvadolce’s vineyards cling to steep, terraced hillsides overlooking the Ligurian Sea, rooted in poor, stony soils of sand, clay and rock that naturally limit yields and concentrate flavor. The strong maritime influence tempers the warm climate, giving long, steady ripening and preserving acidity in the Rossese grapes. Farming is organic and strongly inspired by biodynamic principles, with an emphasis on biodiversity and minimal inputs. Grapes are hand-harvested at optimal ripeness, sorted carefully and typically fermented with indigenous yeasts, often with a portion of whole clusters to enhance perfume and structure. Vinification is deliberately low-intervention, with gentle extraction and aging in neutral vessels such as concrete or older wood, minimal sulfur and no unnecessary fining or filtration, allowing the wine to express the purity of Rossese and the Selvadolce terroir.

Food & Serving
Rosso...Se 2020 is a wonderfully versatile table wine that shines with Ligurian and Mediterranean cuisine. It pairs beautifully with grilled or roasted fish (especially tuna or swordfish), charcuterie, rabbit stews, roasted chicken, herbed pork, tomato-based dishes, Niçoise-style salads, olive tapenade, and vegetable dishes featuring eggplant, peppers and fresh tomatoes. Soft to semi-firm cheeses, such as Taleggio or young Pecorino, also work beautifully. Serve lightly chilled, around 14–16°C (57–61°F), to highlight its freshness and aromatic lift. A brief decant of 20–30 minutes can help the wine open up, but it’s not strictly necessary; a large Burgundy-style glass will showcase its delicate perfume best.

Selvadolce is a small, highly regarded estate in Liguria, located near Bordighera, just inland from the Italian Riviera. Led by the visionary grower-winemaker Aris Blancardi, the estate has gained a strong reputation for its soulful, terroir-driven wines made from local varieties such as Rossese and Pigato. What began as a family flower farm evolved into a tiny but influential winery, farmed according to organic and biodynamic principles and focused on preserving the fragile coastal ecosystem.
