Tasting Notes
In the glass, this 2019 Cabernet Sauvignon shows deep, dark color and the richness you’d expect from a wine of this stature. The nose is intensely fruit-driven, with layers of blueberry, blackberry, and blackcurrant lifted by crème brûlée and brioche, while bright red cherry adds freshness and balance. The palate is full-bodied, generous, and polished, with dark berry fruit leading the way before notes of roasted coffee and dark chocolate emerge on the finish. Despite its power, the wine remains remarkably expressive and approachable now, though it has the structure and concentration to age gracefully for many years.

Production
Made from Cabernet Sauvignon grown in the historic To Kalon Vineyard in Napa Valley, this wine reflects one of the region’s most celebrated terroirs. Schrader Cellars and winemaker Thomas Rivers Brown pay meticulous attention to detail, selecting only French oak barrels from Darnajou and Taransaud for aging. The wine spent 18 months in French oak, helping to shape its texture, enhance its complexity, and frame the rich fruit with refined structure.

Food & Serving
This is a superb match for prime rib, grilled ribeye, braised short ribs, or lamb with rosemary and garlic. It also pairs beautifully with hard aged cheeses and truffle-based dishes. Serve at 16–18°C, and consider decanting for 1–2 hours if enjoying it young to allow the aromatics and layered fruit to fully open.
