Made from 100% Vermentino and shaped by the coastal climate between the Ionian and Adriatic seas, it combines fragrance, texture, and clarity in a style that feels both vibrant and refined.

Tasting Notes
Pale straw in the glass, this wine is typically bright and inviting, with a delicate floral edge and a clean, sun-kissed character. The nose leans toward white flowers, citrus, and gentle herbal notes, while the palate is crisp and lively, with good freshness, a soft mineral touch, and a supple, easy-drinking finish. The sand-rich soils and maritime influence help keep the profile elegant and well balanced, giving the wine a graceful, aromatic lift. It is made to be enjoyed young for its freshness and perfume, though it should hold its charm well over the next couple of years.

Production
Timo comes from vineyards in Puglia on predominantly sandy soils, where the Mediterranean terroir and constant coastal influence help shape a wine with purity and finesse. The grapes are de-stemmed before pressing, then undergo a short cold maceration to preserve the wine’s subtle floral aromas. Fermentation takes place in stainless steel tanks over 13 to 15 days at controlled temperatures, followed by five months of maturation in tank to maintain freshness and definition.

Food & Serving
This is an excellent match for appetizers, seafood starters, light salads, and soft to medium cheeses, where its freshness and aromatic lift can shine. Serve chilled at 10-12°C, and there is no need to decant—just pour and enjoy young to capture its lively fruit and floral character.
