San Filippo’s Brunello di Montalcino 2019 is crafted entirely from Sangiovese (locally known as Sangiovese Grosso or Brunello) grown on hillside vineyards in the eastern sector of Montalcino, an area known for its well-draining galestro and marl soils and excellent sun exposure. The combination of altitude and cooling breezes helps preserve freshness and aromatic detail in the grapes. Harvest is typically carried out by hand, with careful selection of bunches to ensure only perfectly ripe, healthy fruit makes it to the cellar. After gentle crushing, fermentation takes place in temperature-controlled tanks, often with an extended maceration to extract fine tannins and complex aromatics. The wine is then aged for several years in a combination of large oak casks and/or carefully selected barrels, in line with Brunello regulations, before resting further in bottle to harmonize its components and refine its texture.
