Tasting Notes
In the glass, this 2004 shows a refined, luminous profile with a fine, persistent mousse. The bouquet unfolds gradually with aromas of freshly baked brioche, citrus peel, green apple, white peach, subtle smoke, hazelnut, and a distinct chalky minerality that speaks directly of its terroir. The palate is concentrated yet silken, balancing ripe citrus, lemon curd, grapefruit, and wet stone with vibrant acidity and a crystal-clear structure. The finish is long, precise, and impressively sustained. While already compelling now, this vintage has excellent aging potential and should continue to evolve beautifully over many years.

Production
Salon’s wines come solely from Chardonnay grown in Le Mesnil-sur-Oger, a Grand Cru village in the Côte des Blancs known for its deep chalk soils and cool, mineral-driven character. The combination of low yields, meticulous vineyard selection, and Salon’s vintage-only approach ensures exceptional purity and expression. Vinification follows the house’s highly selective and restrained style, designed to preserve tension, finesse, and longevity.

This Champagne pairs beautifully with oysters, caviar, sashimi, shellfish, and delicate seafood dishes, as well as fine poultry or dishes with subtle cream sauces. Serve chilled at around 8-10°C.
