Tasting Notes
In the glass, the 1995 Salon shows a limpid, crystalline color with a pale gold core and silver reflections, the fine bead forming a delicate, persistent mousse. The nose is graceful and refined: lifted notes of lemon zest, white flowers and chalky minerality unfold into subtler tones of fresh brioche, hazelnut and a soft, delicate red-fruit nuance reminiscent of wild strawberry. On the palate, this vintage is all about precision and poise. The attack is taut and vertical, driven by a saline, chalk-infused acidity that carries flavors of citrus oil, green apple, almond cream and subtle pastry. That faintly “strawberry-like” impression noted on the nose lends a gentle sweetness of fruit without any heaviness, keeping the wine aerial and ballet-like in its movement across the palate. The finish is long, dry and pure, with lingering minerality and a touch of toast from extended aging. Production
Salon 1995 is a 100% Chardonnay Blanc de Blancs from the grande vallée of Le Mesnil-sur-Oger, one of Champagne’s most revered grand cru villages on the Côte des Blancs. The vines, deeply rooted in pure chalk, give the wine its hallmark tension, salinity and finesse. Grapes are meticulously hand-harvested at optimal ripeness from a selection of old-vine parcels, then gently pressed to preserve delicacy and aromatic clarity. Fermentation traditionally takes place in stainless steel to emphasize purity rather than oak influence, followed by an exceptionally long maturation on the lees in bottle, contributing to the wine’s fine mousse, creamy texture and complex autolytic nuances. Disgorgement is done with a restrained dosage, allowing the terroir character of Le Mesnil to shine through.

Food & Serving
This is a Champagne to pair with refined, delicately flavored dishes rather than heavy sauces or bold spices. Think caviar or oscietra roe, fresh oysters, scallop carpaccio, turbot with beurre blanc, or simple langoustines with butter and lemon. It also works beautifully with fine sushi and sashimi, aged Comté, or a well-made poultry dish with morel cream. Serve chilled but not icy, ideally around 10–12°C (50–54°F), to allow the aromatics and texture to fully express themselves. A brief, gentle splash into a wide-bowled white wine glass—or opening the bottle 20–30 minutes before serving—can help this mature vintage unfurl its layers.
