Tasting Notes

The nose unfolds in layers: pure red cherries and sour cherry compote mingle with notes of violet, dried Mediterranean herbs, leather, and a delicate touch of tobacco and underbrush. Production
The fruit for Salicutti’s Rosso di Montalcino 2008 comes from southeast-facing, high-lying vineyards on calcareous clay and galestro (friable marl and shale), soils that naturally limit yields and emphasize tension, minerality and aromatic lift in Sangiovese Grosso. At the time, the estate was in transition toward full organic certification, already working with low-intervention, sustainable practices in the vineyard. Grapes are carefully hand-harvested and undergo strict bunch selection to ensure only perfectly ripe, healthy fruit makes it into the fermenters. Fermentation takes place in temperature-controlled stainless steel tanks to preserve the purity of the fruit and the precision of the vintage, followed by approximately 12 months of aging in large Slavonian oak casks. This traditional, large-format oak adds structure and subtle spice without overshadowing the grape’s intrinsic character, after which the wine rests further in bottle prior to release to achieve additional harmony.

This mature Rosso di Montalcino is a natural partner for classic Mediterranean and Tuscan-inspired dishes. Think grilled or roasted lamb with rosemary, slow-cooked ragù, pasta with porcini or other earthy mushrooms, sausages with lentils, or aged hard cheeses such as Pecorino Toscano or Parmigiano Reggiano. Serve at around 16 °C to highlight its aromatic complexity and freshness; if the bottle is coming directly from a cool cellar, allow it to come up slightly in temperature in the glass. A gentle decant of 30–45 minutes is recommended, both to help any sediment settle and to allow the mature bouquet to fully unfold.
