Saint Hilaire Coteaux d'Aix en Provence 2024 is a classic, pale-hued Provençal rosé that captures the sun-drenched elegance of southern France. Crafted from Cabernet Sauvignon, Cinsault, Grenache and Syrah, it offers a beautifully balanced profile that’s as suited to relaxed aperitifs as it is to refined dining. Rooted in generations of the Lapierre family’s work in Coudoux, this cuvée reflects a long-standing passion for the land and its distinctive terroir.

Tasting Notes
In the glass, this rosé shows a delicate, very light salmon-pink colour with shimmering reflections, characteristic of premium wines from Coteaux d’Aix-en-Provence. The nose is fresh and expressive, opening with wild strawberries, white peach and red currants, layered with notes of citrus zest, rose petals and a subtle hint of Provençal herbs. On the palate, Saint Hilaire 2024 is dry, crisp and supple, with a fine balance between lively acidity and gentle fruit richness. Flavours of raspberry, peach and melon are lifted by notes of grapefruit and a faint saline edge that brings real drinkability. The blend of Cabernet, Cinsault, Grenache and Syrah adds both aromatic complexity and a subtle structure, giving the wine a satisfying, clean finish. This is a rosé to enjoy in its youth for maximum freshness and vibrancy; ideally within 1–3 years of the vintage.

Production
The vineyards of Château Saint Hilaire lie in the Coteaux d’Aix-en-Provence area, where Mediterranean sunshine, cooling mistral winds and limestone-clay soils combine to give grapes excellent ripeness and natural freshness. The estate benefits from a mosaic of plots around Coudoux, allowing for careful selection of fruit from the best-exposed parcels. Grapes are typically harvested in the cool of early morning to preserve aromatics, then quickly brought to the modern winery built at the heart of the vineyards. For this rosé, gentle pressing and cool temperature-controlled fermentation in stainless steel help protect delicate fruit aromas and colour, while short skin contact ensures the wine retains its pale hue and refined structure, in keeping with the contemporary Provençal style.

Food & Serving
This rosé is a versatile partner at the table, pairing beautifully with Mediterranean cuisine such as Niçoise salad, grilled sea bream, prawns, or marinated octopus. It also works well with charcuterie, sushi, summer vegetable tarts, goats’ cheese, and light Provençal dishes with tomato, garlic and herbs. Serve well-chilled at around 8–10°C to highlight its freshness and aromatics. Decanting is not necessary, but opening the bottle a few minutes before serving allows the wine’s delicate floral and red fruit notes to fully express themselves.

Producer
Château Saint Hilaire is the culmination of more than two centuries of the Lapierre family’s connection to the land in Coudoux, in the heart of Provence. The story began in the late 18th century, when the family first settled and cultivated vines and olive trees in the area. In 1935, Jean Lapierre left his career as a French naval officer to dedicate himself fully to farming the estate, which his son Max later transformed into a true wine-growing property in 1952. In 1973, Yves Lapierre created Domaine Saint Hilaire, driven by the ambition to produce wines whose quality is firmly rooted in the originality of the terroir. This vision led to the construction of a state-of-the-art winery, Château Saint Hilaire, begun in 2011 with his sons Nicolas and Bruno and completed in 2016. Today, the estate is recognized as a serious quality player in the Aix-en-Provence area, uniting family tradition with modern winemaking to showcase the character of its Provençal vineyards.
