The warm Mediterranean climate, moderated by the Mistral wind, allows the grapes to ripen fully while preserving aromatic intensity. Harvesting is typically carried out by hand, with strict selection in the vineyard and at the sorting table to ensure only perfectly ripe, healthy bunches make it into the final blend. In the cellar, the emphasis is on expressing the character of Grenache and its terroir: gentle extraction, temperature-controlled fermentation and careful handling preserve the wine’s fragrance and texture. Aging is often done in a mix of neutral vessels (such as concrete or large, older foudres) and, where used, discreet oak, allowing the natural richness and complexity of the fruit to shine without overt wood influence.
