In magnum, the wine often evolves more slowly and harmoniously, offering an extra touch of finesse for special occasions.

Tasting Notes
In the glass, this Cuvée Brut typically shows a pale straw to light golden hue, animated by a persistent stream of fine, delicate bubbles and a lively mousse. On the nose, expect fresh aromas of green apple, pear, citrus zest, and white flowers, often layered with subtle notes of brioche, almond, and a gentle chalky minerality that signal its Champagne origins. The palate is usually crisp and precise, with vibrant acidity giving energy to flavors of orchard fruit, lemon, and hints of stone fruit. A touch of autolytic complexity—fresh bread, pastry, or biscuit—rounds out the mid-palate, leading into a clean, refreshing, and dry (Brut) finish. As a non-vintage Champagne, it is crafted for immediate enjoyment, though in magnum format it can develop additional complexity over several years if stored correctly.

Production
Ruffin & Fils is based in Champagne, France, where cool climate and chalk-influenced soils provide the tension and minerality that define the region’s best wines. The Cuvée Brut is generally a blend of classic Champagne varieties—often Chardonnay, Pinot Noir, and Pinot Meunier—sourced from carefully selected vineyard parcels. Grapes are harvested by hand, in line with traditional Champagne practices, to ensure that bunches arrive intact and pristine at the press. After gentle pressing, the base wines are fermented in stainless steel and then blended across multiple vintages to achieve a consistent house style. The second fermentation takes place in bottle, followed by an extended period of aging on the lees, which builds texture, complexity, and the fine bead of bubbles before disgorgement and dosage to the Brut level.

Food & Serving
This Champagne Cuvée Brut is highly versatile at the table and excels as an aperitif with oysters, shellfish, sushi, and delicate seafood canapés. It also pairs beautifully with light starters, goat cheese, soft-ripened cheeses, poultry dishes, and salty snacks like gougères or artisanal crisps. Serve well-chilled at around 8–10°C (46–50°F) for maximum freshness and aromatic expression. Decanting is not required, but opening the magnum a few minutes before serving and pouring the first small glass can help the wine open up and show its full bouquet.
