Production
This Pouilly-Fuissé is sourced from Chardonnay vines rooted in classic limestone and clay-limestone soils of southern Burgundy, where the slopes are generally oriented east to southeast, giving the grapes generous sun exposure while retaining freshness. The stony, well-drained soils naturally limit yields and concentrate flavour, while the cooler nights of the Mâconnais help to preserve acidity and aromatic lift. Grapes are typically harvested by hand at optimal ripeness to ensure careful selection and minimal damage to the fruit. In the cellar, the juice would be gently pressed and fermented at controlled temperatures, often in a mix of stainless steel and oak to balance purity of fruit with texture and complexity. A period of maturation on fine lees, with occasional bâtonnage, contributes richness and a creamy mouthfeel, while maintaining the clarity and mineral definition that characterize the appellation.

It pairs beautifully with grilled or pan-fried white fish, scallops, lobster, or prawns, especially when served with beurre blanc, citrus butter, or a light cream sauce. Roast chicken with herbs, veal in a white wine sauce, and creamy pasta with mushrooms or morels are also excellent matches, as are semi-soft cheeses such as Comté, Beaufort or mild goat cheeses. Serve at 10–12°C to highlight its freshness and aromatic detail; slightly warmer (around 12°C) will bring out more texture and complexity. A short decant of 20–30 minutes, or simply opening the bottle a bit before serving, can help the wine open up and reveal its floral and nutty nuances.
Producer
Although bottled under the name Romuald Valot, the background information for this cuvée is closely tied to one of Burgundy’s respected independent négociant families. The story begins in 1947, when André Goichot founded his négociant house and, in 1976, gave it a major boost by investing in Château de la Guiche and acquiring the Les Dressolles parcel in Meursault—key steps that anchored the family in some of Burgundy’s most coveted terroirs. Today based in Beaune, the company remains one of the last independent, family-owned négociants in the region. In 2015, the Goichot family took on the exclusive distribution of Domaine des Guignottes near Buxy on the Côte Chalonnaise, followed in 2016 by assuming control of the historic Château du Cray estate, whose 22 hectares of vines surround the château on east to southeast-facing slopes. Through these estates and long-standing grower partnerships, the family has built a reputation for offering authentic, terroir-driven Burgundy—wines like this Pouilly-Fuissé that combine regional typicity, reliability and a clear sense of place.
