Tasting Notes
In the glass, this Blanc de Blancs shows a luminous, pale gold hue with fine, persistent bubbles forming a delicate mousse. The nose is precise and lifted, opening with notes of lemon zest, green apple, white flowers, and chalky minerality, followed by hints of toasted brioche, almond, and a subtle creamy undertone from lees aging.
On the palate, it is dry, taut, and vibrant, with a racy citrus core, crisp orchard fruit, and a saline, chalk-inflected backbone that clearly speaks of Chouilly’s limestone soils. The texture is both silky and energetic, with very well-integrated acidity and a long, clean finish marked by notes of grapefruit, white peach, and a gentle nuttiness. While intended to be enjoyed on release, this NV cuvée has the structure to develop further complexity over 3–6 years in the cellar, gaining more brioche, hazelnut, and honeyed nuances with time.
Production
The grapes for this Champagne come exclusively from Grand Cru vineyards in Chouilly, where deep chalk and limestone subsoils provide excellent drainage and lend the wine its signature mineral tension and finesse. Chardonnay is harvested by hand at optimal ripeness to preserve freshness and aromatic clarity, with rigorous selection both in the vineyard and at the press. Vinification takes place in stainless steel to highlight purity and precision, followed by extended aging on the lees in bottle, which contributes to its fine mousse, subtle autolytic notes, and textural depth. A carefully judged dosage maintains a Brut style that balances crisp acidity with just enough richness on the palate.
Food & Serving
This Grand Cru Blanc de Blancs shines as an apéritif but truly comes into its own at the table. It pairs beautifully with oysters, scallops, sushi, and delicate white fish, as well as fine shellfish dishes such as lobster or langoustine. Its minerality and tension also complement creamy cheeses (like young Comté or Brie) and refined poultry dishes with light sauces. Serve well-chilled at about 8–10°C (46–50°F); a brief 10–15 minutes in the glass or a wide tulip-shaped flute will allow the wine to open gradually. Decanting is generally not necessary, but pouring into a larger white-wine or tulip Champagne glass will best showcase its aromatic complexity.
