Tasting Notes
Deep, nearly inky in the glass, this wine immediately signals its depth and intensity. The nose is layered and expressive, with aromas of blackcurrant, blackberry, dark cherry, black truffle, violet, pencil lead, dark chocolate, and sweet pipe tobacco. On the palate, it is full-bodied, polished, and impressively harmonious, with ripe dark fruit wrapped around finely integrated oak spice and a silky texture. The finish is long and graceful, and while the wine is already beautifully composed, it has the structure and depth to age gracefully for a decade or more.

Production
This Cabernet Sauvignon is made entirely from grapes grown in the Horse Heaven Hills AVA, with 90% sourced from Champoux Vineyard and 10% from Mach One Vineyards. The region’s warm climate and well-suited soils provide ideal conditions for Cabernet Sauvignon, while the grapes are harvested by hand to ensure only the best fruit reaches the cellar. The wine is gently fermented and then aged for 20 months in 100% new French oak, adding complexity, structure, and a refined spicy frame.

Food & Serving
This is an excellent match for richly flavored dishes such as grilled ribeye, roasted lamb, beef tenderloin, venison, or slow-braised short ribs. It also pairs well with aged hard cheeses. Serve at around 16–18°C, and consider decanting for 1–2 hours if drinking young to allow the wine to fully open.
