Principe Pallavicini, Chateau Pontet Canet, 2021

Château Pontet-Canet is one of the most respected estates in Pauillac and a 1855 Fifth Growth, long admired for the way it combines classic Bordeaux structure with remarkable purity and energy. Under Alfred Tesseron, it has become a benchmark for biodynamic winemaking in the Médoc, with a style that speaks clearly of its exceptional terroir.

Tasting Notes
In the glass, the 2021 vintage shows a deep, refined Bordeaux profile with freshness at its core. Expect aromas of blackcurrant, dark cherry, violet, cedar, and a subtle graphite note, all lifted by a cooler, more classical year that lends precision and elegance.\n\nOn the palate, it is medium to full-bodied with focused fruit, a mineral edge, and a firm, well-defined tannin structure. The finish is long, linear, and elegant, and while it can be enjoyed young with decanting, it has the depth and balance to evolve beautifully over the next 15 to 25 years.

Production
The wine is sourced from Pontet-Canet’s famed gravel plateau in Pauillac, where deep gravel and limestone soils provide excellent drainage and help produce concentration and intensity. The vines average around 40 years of age, contributing to the wine’s complexity and layered character. Harvesting is carried out with careful selection, and vinification follows a minimal-intervention approach. The wine is matured for around 16 to 18 months in French oak barrels, foudres, and amphorae, preserving freshness and terroir expression while adding structure and polish.

Food & Serving
This is an excellent match for lamb with rosemary, grilled or roasted beef, entrecôte, game, mushroom dishes, duck confit, and truffle-based recipes. It also works very well with mature cheeses such as Comté and Gruyère. Serve at around 16–18°C, and consider decanting when drinking young to open up the aromatics and soften the tannins.
