The name “Metamorfosis” reflects the evolution of both grapes and region, capturing how a white-wine stronghold like Collio can also produce deeply characterful reds.
Tasting Notes
In the glass, the 2016 Metamorfosis shows a deep, garnet-tinged ruby color with good intensity and a hint of brick at the rim, revealing its evolution in bottle. The nose opens with dark cherries, blackcurrants and ripe plum, layered with notes of dried herbs, graphite, cedar and a subtle sweet spice from oak aging. Hints of tobacco leaf, cocoa and a gentle floral lift add complexity as it breathes.
On the palate, this is a structured yet supple red, with Cabernet’s firm backbone wrapped in Merlot’s round, velvety fruit. Expect flavors of black cherry, cassis and wild berries, framed by savory tones of leather, bay leaf and a touch of licorice. Production
Metamorfosis is sourced from hillside vineyards in Collio, where vines grow on the region’s characteristic ‘ponca’ soils—stratified marl and sandstone that naturally limit yields and lend the wine both structure and minerality. The climate benefits from a unique combination of Adriatic breezes and cool air from the Alps, allowing Cabernet Sauvignon and Merlot to ripen fully while preserving acidity. Grapes are typically harvested by hand to ensure careful selection of bunches, then gently destemmed and fermented in temperature-controlled tanks to extract color and flavor without excessive harshness. After maceration, the wine is aged in oak barrels—often a mix of barriques and larger casks—for refinement and integration of tannins, before further bottle aging to achieve the layered, harmonious profile that defines Metamorfosis.

This Collio Rosso is an excellent partner for rich, savory dishes: think roasted lamb, braised beef, grilled steak, or slow-cooked ragù over fresh pasta. It also pairs beautifully with aged cheeses, porcini mushroom dishes, game birds and hearty Mediterranean-inspired stews. Serve at 16–18°C to showcase its depth and complexity; slightly cooler for a fresher, more linear impression, slightly warmer for a softer, more opulent feel. Decanting for 45–60 minutes is recommended to allow the aromas to fully unfurl and the tannins to soften, especially if opened on the younger side of its drinking window.
