Piot Sevilliano Rebelle is a distinctive Chardonnay-based Champagne from the family-run house of Piot-Sévillano in Vincelles, in the heart of the Vallée de la Marne. It brings together the domaine’s traditional roots and modern, sustainable approach, offering a fresh expression of Champagne with a refined, fruit-driven style.

Tasting Notes
Pale gold in the glass with a fine, lively mousse, it opens with bright aromas of citrus, white flowers, green apple, and a subtle mineral edge. On the palate, it is elegant and precise, with a crisp, chiselled texture, clean acidity, and a balanced finish that leans toward freshness and finesse. While accessible in its youth, the wine should also hold well for a few years, developing greater depth and complexity with time. The Chardonnay core gives it a graceful structure, making it appealing both as an aperitif and at the table.

Production
The grapes come from Piot-Sévillano’s own vineyards in the Vallée de la Marne, where the family farms sustainably across 8 hectares with no pesticides, organic fertiliser, rainwater collection, and HVE3 certification. Harvesting is carried out from estate-grown vines, and the wine is made with a minimum-intervention mindset, using only modest sulphur levels to preserve purity and freshness.

Food & Serving
This Champagne pairs beautifully with oysters, shellfish, sashimi, goat’s cheese, and lightly prepared white fish, as well as refined poultry dishes. Serve well chilled at 8–10°C, and there is usually no need to decant Champagne; simply open shortly before serving to preserve its finesse and sparkle.

Piot-Sévillano is a family estate led by Christine Scher-Sevillano and her husband Vincent, who returned to the family home in Vincelles to continue and renew the domaine’s Champagne tradition. Producing around 60,000 bottles annually from its own vineyards, the house is known for its fruit-forward, rounded style and for its strong commitment to sustainable viticulture, including long-standing pesticide-free farming and HVE3 certification.
