Piot-Sévillano Provocante, Le Petit Eden is a beautifully expressive non-vintage Champagne that combines the finesse of Chardonnay with the structure of Pinot Noir. Crafted by the family-run Piot-Sévillano estate in Vincelles, it reflects a thoughtful balance of tradition and modern, organic-minded viticulture.

Tasting Notes
Expect a bright, elegant Champagne with a lively mousse and a refined pale golden hue. On the nose, it leans toward fresh citrus, orchard fruit, and subtle brioche-like notes, while the palate is rounded and fruit-forward with a clean, refreshing finish. The blend of Chardonnay and Pinot Noir gives it both lift and substance, making it enjoyable now and well suited to short-term cellaring, where it can gain a little more depth and complexity.

Production
The grapes come from the estate’s own vineyards in the Marne Valley, where Piot-Sévillano farms 8 hectares with a strong commitment to sustainability. The family has avoided pesticides for the past 20 years, uses organic fertilization, collects rainwater, and works with minimal sulphur additions. Harvesting is carried out from their own vines, and the wine is produced in a style that emphasizes purity, fruit expression, and a supple, approachable texture.

Food & Serving
This Champagne is an excellent match for seafood, sushi, roast chicken, creamy cheeses, and light dishes with a touch of richness. Serve well chilled at around 8–10°C, and decanting is not necessary.

Producer
Champagne Piot-Sévillano is a family-owned producer in Vincelles, in the Vallée de la Marne, now led by Christine Scher-Sevillano and her husband Vincent. Christine returned to the family estate after a career in journalism in Paris, bringing a fresh perspective while preserving the domaine’s heritage. With an annual production of around 60,000 bottles and HVE3 certification, the estate has earned recognition for its fruit-driven, rounded Champagnes and its commitment to environmentally responsible winemaking.
