Tasting Notes
In the glass, Clos des Graviers shows a brilliant, pale golden hue with fine, persistent bubbles that form a delicate mousse. The nose opens with generous aromas of ripe orchard fruit—think pear, apple and a touch of Mirabelle plum—layered with citrus zest, white flowers and hints of brioche, toasted nuts and chalky minerality.
On the palate, this Champagne is both elegant and structured. Chardonnay brings tension and brightness, Pinot Noir adds body and red-fruited nuance, while Meunier contributes roundness and charm. Flavors of citrus, stone fruit and green apple are wrapped in subtle pastry notes, hazelnut and a mineral backbone that stretches through a long, precise finish. Production
Clos des Graviers comes from a vineyard in Le Breuil, planted in the 1950s on gravelly, well-drained soils that encourage deep root systems and concentrated fruit. The terroir, with its cool Champagne climate and mineral-rich subsoils, naturally favors finesse and tension in the wines. The grapes—Chardonnay, Pinot Noir and Pinot Meunier—are harvested by hand at optimal ripeness to ensure careful selection of only the healthiest bunches. In the cellar, each variety is vinified with precision, typically in stainless steel to preserve purity of fruit, followed by an extended period of aging on the lees in the estate’s quiet, dark cellars. This long maturation allows the wine to develop creamy texture, complexity and fine bubbles before disgorgement and release.
Food & Serving
This Champagne pairs beautifully with refined appetizers such as oysters, caviar, scallop carpaccio or delicate sushi, and it works equally well with lobster, turbot, sole or roasted poultry in light cream sauces. Aged hard cheeses and mild, bloomy-rind cheeses also make excellent partners. Serve well chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in the glass or a quick, gentle decant in a chilled carafe can help the aromas open up, especially if the bottle has a few years of age.
