Description

Pierre Leboeuf Grand Cru is a characterful non-vintage Champagne from the historic Grand Cru village of Aÿ, crafted by a small family house with deep traditional roots. Made from Chardonnay and Pinot Noir, it reflects the house style: artisanal, limited in production, and firmly anchored in classic Champagne methods.

Tasting Notes
In the glass, it typically shows a fine mousse and a bright, pale golden colour with subtle reflections. The nose leans toward fresh citrus, orchard fruit, white flowers, and delicate brioche notes, with Pinot Noir lending a touch of red-fruit depth and Chardonnay bringing lift and precision. On the palate, expect a balanced, textured Champagne with crisp freshness, elegant fruit, and a dry, refined finish. The Grand Cru origin gives it extra finesse and structure, while the traditional cellar work helps preserve complexity. As a non-vintage Champagne, it is made for immediate enjoyment, though it can develop added nuance over the next few years.

Production
Pierre Leboeuf works small parcels across the Vallée de la Marne, including a clos, with hand-harvested grapes and a strong emphasis on traditional production. After pressing with a modern press, the base wines are carefully assessed by cellar master Vincent Leboeuf, who decides how each juice should be used in the final cuvées. Secondary fermentation takes place in the house’s old vaulted cellar, with remuage still done in pupitres and disgorgement carried out partly by hand and partly by machine.

Food & Serving
This Champagne is an excellent aperitif, but it also shines with oysters, shellfish, sushi, light seafood dishes, roast chicken, and creamy soft cheeses. Serve well chilled at 8–10°C, and while decanting is not recommended for Champagne, opening it a few minutes before serving can help the aromas open up gently.

Producer
Champagne Pierre Leboeuf is a small, family-run house based in Aÿ, one of Champagne’s most prestigious Grand Cru villages. The historic home, originally built in the 16th century for King Henri IV, adds to the estate’s charm and heritage. Now run by Vincent Leboeuf and his daughter Hélène, the house continues to produce only around 25,000 bottles a year, maintaining a handcrafted approach that gives it a strong identity in the region.
