The 2022 vintage brought generous sunshine and optimal ripening, allowing for careful, mostly manual harvesting at ideal maturity. In the cellar, traditional Burgundian methods guide vinification: gentle destemming, cold maceration to draw out color and aroma, followed by fermentation in vats with regular punch-downs or pump-overs to extract fine tannins and structure. The wine is then aged in French oak barrels, a portion of which are new, to add subtle spice and texture while respecting the purity of the fruit and the identity of the terroir.
