Crafted by one of France’s most respected natural-leaning winemakers, it combines Cornas’ trademark power with an uncommon finesse and drinkability. This bottling showcases the steep, granite slopes of Cornas in a pure, unmasked style that highlights fruit, spice and minerality over oak.

Tasting Notes
In the glass, the 2023 Cornas shows a deep, youthful purple core with vivid magenta hues at the rim, signaling both concentration and energy. The nose opens with black cherry, blackberry and wild blueberry, followed by layers of violet, cracked black pepper, smoked meat, and a touch of tapenade and graphite, all wrapped in a subtle herbal lift. On the palate, this is intense yet beautifully poised: juicy dark fruit is framed by firm but fine-grained tannins and a lively, savory spine. Notes of blackcurrant, plum skin, espresso bean and dark chocolate mingle with garrigue, black pepper and a stony, granitic edge that lingers long on the finish. Youthful now, it will reward patience; expect a good 10–15 years of positive evolution in a proper cellar as the tannins integrate and the savory, smoky complexities deepen.

Production
Sourced from steep, sun-soaked slopes of decomposed granite in Cornas, this wine reflects one of the Northern Rhône’s most distinctive terroirs—poor, stony soils that naturally limit yields and intensify flavor. Grapes are typically harvested by hand to ensure optimal ripeness and selection on these challenging terraces. True to Philippe Pacalet’s philosophy, vinification favors whole-cluster fermentation with indigenous yeasts, gentle extraction, and minimal intervention, often with little to no new oak so the character of Syrah and granite can shine through. The wine is then raised in neutral vessels, allowing texture and complexity to develop without masking the purity of fruit and site.

Food & Serving
This Cornas is a natural partner for rich, savory dishes such as roast lamb with rosemary, slow-braised beef cheeks, duck confit, venison, or charcoal-grilled ribeye. It also works beautifully with game birds, earthy mushroom dishes, lentil stews, and hard, aged cheeses like Comté or Manchego. Serve at 16–18°C (60–64°F) to showcase both aromatics and structure. Decanting for 1–2 hours in its youth is strongly recommended to soften the tannins and allow the wine’s floral, smoky and spicy nuances to fully emerge.
