Coming from the renowned village of Pommard in the Côte de Beaune, this wine reflects a terroir of limestone-clay soils with good drainage, which naturally limits yields and concentrates flavor in the Pinot Noir grapes. The fruit is typically harvested by hand to ensure careful selection of bunches and to preserve the integrity of the berries. In the cellar, the grapes are destemmed (often with a small proportion of whole clusters depending on the vintage), followed by a cool maceration and a controlled fermentation in vat to extract color, aroma, and fine tannins. The wine is then aged in French oak barrels—often including a modest proportion of new oak—to add complexity and texture without overpowering the purity of the fruit and the expression of Pommard’s distinctive mineral backbone.
