Petra sources the Cabernet Sauvignon for Potenti from hillside vineyards in coastal Tuscany, where the combination of well-drained, stony soils and sea breezes ensures slow, even ripening and excellent concentration. Grapes are typically picked by hand at optimal phenolic maturity, with careful sorting in the vineyard and at the winery to retain only the healthiest bunches. Fermentation takes place in temperature‑controlled tanks to preserve aromatics and extract fine tannins rather than harshness, followed by aging in quality oak barrels (often a mix of new and used) to add complexity, structure and subtle spice without overwhelming the fruit. The result is a Cabernet that clearly speaks of Tuscan light, warmth and minerality.
