Peter Michael L’Esprit des Pavots 2021 is the estate’s second wine, but it carries none of the usual compromise associated with that label. Sourced from Peter Michael’s own vineyards in the Knights Valley area of California and crafted by winemaker Nicolas Morlet, it delivers a polished, Bordeaux-inspired profile with genuine depth and pedigree.

Tasting Notes
In the glass, the wine shows a deep, concentrated ruby-purple color. The nose is immediately inviting, unfolding with dark cherry, plum, cocoa, black truffle, leather, licorice, and the subtle cedar-spice note of a fine cigar box. The palate is medium-bodied, supple, and already beautifully textured, with velvety tannins and a seamless core of ripe dark fruit layered with savory complexity. It feels elegant rather than heavy, and the long, balanced finish suggests a wine that can be enjoyed now while still having the structure to develop gracefully over the next several years.

Production
L’Esprit des Pavots is drawn from Peter Michael’s estate vineyards, Les Pavots and Au Paradis, located in the cool, elevated landscape of California’s Knights Valley. The sites benefit from a mix of volcanic and well-drained mountain soils, helping produce fruit with concentration, freshness, and refined tannins. The 2021 blend was assembled from Cabernet Sauvignon, Merlot, Cabernet Franc, and Petit Verdot, then matured for 18 months in French oak barrels before release.

Food & Serving
This is a natural match for grilled ribeye, lamb chops, roasted beef tenderloin, braised short ribs, or mushroom-based dishes with earthy depth. It is best served at around 16–18°C, and decanting for about 30–60 minutes will help the aromatics open up and soften the wine’s structure even further.
